Pasta with Tomatoes, Bacon, Onion and Peas

The key to this quick sauce is to avoid overcooking the tomatoes. It’s the fresh flavor that makes it!

  • SAM_1460 (2)3 slices bacon, cut into small pieces
  • ½ large yellow onion, chopped small
  • 28 oz can of crushed tomatoes
  • 1 cup frozen green peas (approximately)
  • Cream
  • Olive oil
  • Salt and pepper
  • 1 lb Pasta

Place a large pot of salted water over high heat. Bring to a boil and add pasta. Cook as directed on package.

Meanwhile, fry the bacon pieces in a large pan until cooked through.

Add chopped onion plus a small amount of olive oil and cook over medium heat until onion is translucent.

Add tomatoes and frozen peas. Bring to a boil then immediately turn burner to simmer.

Drizzle a small amount of cream into the sauce(to taste).

Season with salt and a generous amount of freshly ground black pepper.

Add cooked, drained pasta to the sauce, mix and serve with grated parmesan cheese.
